Pho Luu wasn't born from a food truck trend or a culinary degree. It was born from a pot that never stopped simmering — the one in the back of a small kitchen in Vietnam, where the smell of star anise and charred ginger meant someone was coming home.
We bring that same patience to Colorado Springs. Our broth is simmered for over 12 hours, our noodles are made fresh every morning, and every bowl is assembled with the kind of care that can't be rushed. No shortcuts. No pressure cookers. Just time, bones, and a whole lot of herbs.
